Australia’s only rainforest dining experience, Flames of the Forest creates memories to last a lifetime.
Picked up from your hotel, your coach will wind through the forest before arriving at a secret, special location where your evening unfolds.
Walk the flame lit path illuminated by candle light before arriving in a secluded clearing where you will be welcomed with sparkling wine. Take your seat under the black silk lined dining area glowing with crystal and bud light chandeliers and flickering flame, all the while surrounded by age old rainforest.
Showcasing a local, tropics inspired menu accompanied by a selection of quality beverages and set amidst the candle lit rainforest under a black silk canopy with sparkling chandeliers, Flames of the Forest offers guests the choice of two distinctly different dining experiences.
• An evening entwined with an Indigenous cultural performance by two local Aboriginal brothers featuring traditional storytelling, didgeridoo and song (Tuesday and Thursday)
• The romantic serenade of a solo acoustic guitarist (Saturday)

Feast on a 7 dish plattered banquet served to the table featuring the freshest local produce (menu below), meats and seafood. Your meal also includes Australian sparkling, white and red wine, beer and soft drinks. Enjoy an intimate an Aboriginal cultural performance featuring didgeridoo, storytelling and song.
Flames of the Forest 6-course Rainforest Dining Experience (Saturday):
Savour a 6 course, plated, tropical tasting menu designed to introduce you to the flavours of the Tropical North and accompanied by a selection of wine and beer whilst enjoying the serenade of a solo acoustic guitarist playing enchanting music throughout the evening.

Flames of the Forest 7 course Aboriginal Cultural Dining Experience (Tuesday and Thursday):
Feast on a 7 dish plattered banquet served to the table featuring the freshest local produce (menu below), meats and seafood. Your meal also includes Australian sparkling, white and red wine, beer and soft drinks. Enjoy an intimate an Aboriginal cultural performance featuring didgeridoo, storytelling and song.

Starter:
• Trio of dips - roasted eggplant with red pepper, feta & fresh herbs, basil pesto & traditional butter served with freshly baked bread
Main Course – served progressively to the table:
• Tiger prawns with a crisp vegetable & sprout salad drizzled with a chilli lime dressing
• Tableland salad of mesclun, roast capsicum, cherry tomatoes, fresh garlic croutons and Spanish onion finished with a honey mustard dressing
• Lemon myrtle infused kangaroo loin on a bed of wild rocket & toasted macadamia nuts garnished with homemade fig chutney
• Pan fried reef fish with lightly steamed seasonal greens and finished with a fragrant coconut & kaffir lime broth
• Jungle spiced chicken with fresh date & fire roasted red pepper couscous topped with a mint & bush lime yoghurt
• Slow roasted Black Angus sirloin on a warm herb roasted chat potato & green bean salad accompanied by confit cherry tomatoes & finished with a red wine jus
Dessert:
• Traditional Pavlova accompanied by seasonal tropical fruits, fragrant vanilla bean chantilly cream and passion fruit coulis

• Lightly seared kangaroo loin carpaccio with a rocket, parmesan & Spanish onion salad with fresh truffle oil & dressed with aged balsamic glaze
• Smoked crocodile rillette on fresh cucumber with salsa verde
• House made prawn tortellini in a fennel cream sauce with fresh garden herbs
• Pan seared fresh reef fish of the day on sautéed seasonal greens with a lemon myrtle infused beurre blanc, finished with a fresh herb salsa
• Herb marinated lamb back strap set on a confit garlic and kipfler potato puree with slow roasted cherry tomatoes & Port wine jus
• Toasted coconut panna cotta with caramelised pineapple accompanied by a local wattle seed gelato on chocolate soil
